"Oeil de Perdrix," translates into "eyes of partridge," which, for fans of dessert wines, immediately brings to mind Tuscany and Vin Santo. In this case, however, the origins are quite different. It is, in fact, an excellent Champagne offered by Maison Jean Vesselle. We are in Bouzy, in the heart of the Montagne de Reims. Oeil de Perdrix is a 100% Pinot Noir from one of the most suitable areas for the cultivation of this noble grape variety. Obtained by brief maceration of the whole bunch of Pinot Noir, a technique that requires great care so as not to bring unpleasant bitter tones into the wine. In the glass it is a fascinating salmon pink with amber reflections. The nose is pleasantly rich, with hints of red currants and strawberries, followed by other notes of ripe fruit and red flowers. In the mouth, it is appreciated for its medium body, with good structure and balance. The finish is long, with a particularly pleasant spicy note. A Champagne for the entire meal, it accompanies both fish and meat dishes with ease. Try it with the classic Sunday roast chicken, a true specialty of rural France.
