Organic, from Insolia and Catarratto. What more, or different, to ask from a Sicilian white ‘ A cut like that, you have to try it. You can't love Sicily and not get lost in the bright straw yellow of this wine. On the nose, it is mineral, with floral notes of orange blossom, lime and broom, followed by fresh fruit, green apple and peach. On the palate, however, it plays everything on the balance between its natural freshness and the warmth of alcohol. On the finish the fruity and savory notes perceived earlier return. The vinification is simple and at the same time accurate. Harvested by hand, carefully selected before destemming and cold pressing. Fermentation in stainless steel and, again in steel, a prolonged aging sur- lie. Simple but not obvious, it is the wine to put on the table if the fish is the protagonist.
