The good Cabernet di Montalcino. This is San Pio, Toscana IGT proposed here by Mastrojanni. From the historic producer in the Sienese hills, Mastrojanni harvests the best Cabernet Sauvignon grapes for this straightforward and pleasant red wine. In the final blend, Cabernet accounts for around 80%, to which is added the true protagonist of this corner of Italy, Sangiovese. The marriage of the two can only result in a wine of great personality. Both, in fact, are sanguine vines, with prima donna characteristics. But in this case, the talented oenologists at the Montalcino winery succeed in finding the perfect synthesis between the two, thanks also to a measured maturation period of about 18 months in French oak tonneaux and small barrels. This is followed by a further 6 months of bottle ageing, indispensable for the two wines to blend at their best. Ruby red with violet hues, San Pio reveals a pleasantly fruity character on the nose, with an elegant spiciness due to the skilful use of wood in the cellar. In the mouth, it is ample and persistent, with soft tannins that are pleasant on the palate. Here again we are faced with a wine that seems to have been born to best accompany tasty grilled meat dishes. International yes, but with a decidedly Tuscan heart.
