Peculiar not so much because of its French origin, we would miss it, but because its base is made up 90 percent of a decidedly unusual grape variety, Mauzac, a white berry planted mainly in southwestern France. Grown just north of the Pyrenees, this variety takes its name from a village near Toulouse. Also known as Blanquette, this grape variety proves to be extremely versatile, suitable for a thousand interpretations. In this case it is aided by 5 percent Chardonnay and Chenin Blanc, respectively, and is processed in the bottle, following the traditional method, remaining in contact with the yeasts for about 15 months. This reveals a delicate sparkling wine suitable both as an aperitif and in combination with simple but tasty dishes, with a decidedly surprising character and personality.
