When the label reads Bourgogne Chardonnay, there is little to add. We are almost certainly looking at a bottle that has all the makings of a lasting impression. Chteau de la Tour de l'Ange, after all, relies heavily on white wines produced from the region's most noble grape variety. In this case it is a wine that comes from careful selection in the vineyard of grapes that have reached full maturity. Harvesting is by hand and vinification absolutely traditional. In fact, the grapes are crushed as soon as they arrive at the winery and are fermented in temperature-controlled steel tanks at 16°C. In this case, the company's aim is to make the most of the rich starting fruit. Therefore, after vinification, the wine is simply allowed to rest for a few months in steel tanks before being bottled. The result is a fresh and pleasant wine. The nose reveals itself to be expressive and well-citrusy, with just a touch of floral reminiscent of white flowers. In the mouth, however, it is rewarding and consistent. Slightly saline, it is the wine that happily accompanies seafood lunches and dinners.
